Bold and flavorful with a hint of spice, this southwest breakfast skillet is a great (and healthy) way to start your morning!
Soutwestern Breakfast Skillet
Over medium-high heat, in a large 5qt saute pan add the olive oil, then frozen onions, garlic, bell peppers, and jalapenos. Saute until tender then set aside in a large bowl.
Return the pan to medium-high heat and add the ground beef. Cook thoroughly and then add the vegetables back in along with the taco seasoning and black beans. Mix together well and then set aside in the large bowl.
Return the pan to medium-high heat then add the eggs. Stir constantly to keep egg whites from burning. Once egg whites are cooked, add in the meat and vegetables and mix thoroughly.
